The shape of the three days
One hill per day, one long lunch per hill, and every viewpoint reached on foot so you have properly earned the view. Mornings are for bakeries, afternoons for the slow drift downhill.
By the third evening you will know a laundry line, a tiled doorway and a grilled-fish window that no list ever mentions. That is the whole point.
